New Digital Divide Video
Here's a new Digital Divide video I just edited together this evening:
Jeremy, I can't thank you enough for recording this song for me. Rox, thanks for your help and input. This was played at a memorial at SPNN earlier today.
I've been working on perfecting a good carnitas recipe.
Carnitas
Start with a nice pork shoulder or other large cut and tie with kitchen twine. Cut slits in the meat and stuff with sliced garlic cloves. Combine adobo seasoning, salt, pepper, and olive oil into a paste and rub this over the entire surface of the pork. Sear the meat in a skillet (I've had good luck with cast iron). Throw it in a crockpot along with onion, cilantro, a jalapeƱo and stock. Cook on low for 8 hours, then remove from the crockpot and broil the meat to crisp up the outside. Drizzle the meat with juice from the crockpot.
I like serving this with warm tortillas, fresh guacamole, queso fresco, and roasted corn.

This past weekend, Rox, Season, and I biked out to Carver Park.
I've created a version of the Digital Divide Initiative documentary that's about a minute and a half shorter than the previous one. This is what will likely play on the website, while the longer cut will be reserved for DVD distribution.
I can't believe this project is almost over!
